  • 1/2 cup unsweetened applesauce
  • 1 ripe peach, diced
  • 1 teaspoon vanilla extract
  • 1/4 cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix rolled oats, whole wheat flour, brown sugar, baking powder, cinnamon, and salt.
  3. Add applesauce, diced peach, and vanilla extract to the dry ingredients and mix until well combined.
  4. If using, fold in the chopped nuts.
  5. Drop spoonfuls of the mixture onto the prepared baking sheet.
  6. Bake for 12-15 minutes or until cookies are golden brown.
  7. Let cool on a wire rack before serving.
