  • 1 cup Greek yogurt
  • ½ cup honey
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup rolled oats
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup dark chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. In a large bowl, mix together the peanut butter, Greek yogurt, honey, eggs, and vanilla extract until smooth.
  3. In another bowl, combine the rolled oats, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring until well combined.
  5. If desired, fold in the dark chocolate chips.
  6. Spread the batter evenly in the prepared baking dish and bake for 20-25 minutes, or until a toothpick comes out clean.
  7. Allow to cool before slicing into squares.
