Healthy Peanut Butter Greek Yogurt Breakfast Blondies

A delicious and healthier twist on traditional blondies using Greek yogurt and peanut butter.

Ingredients

  • 1 cup natural peanut butter
  • 1 cup Greek yogurt
  • 1/2 cup honey
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup rolled oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup dark chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. In a large mixing bowl, combine the peanut butter, Greek yogurt, honey, eggs, and vanilla extract until smooth.
  3. In another bowl, mix the oats, baking powder, and salt.
  4. Add the dry ingredients to the wet ingredients and mix until combined.
  5. Fold in the dark chocolate chips.
  6. Pour the mixture into the baking dish and spread evenly.
  7. Bake for 25-30 minutes or until golden brown.
  8. Allow to cool before cutting into squares.

Notes

  • These blondies can be stored in an airtight container for up to a week.
  • For less sweetness, adjust the amount of honey.
