- 4 cups broccoli florets
- 1 cup shredded cheddar cheese
- 4 slices turkey bacon, cooked and crumbled
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup milk
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon cornstarch (optional, for thickening)
- In a large pot, heat olive oil over medium heat. Add the diced onion and garlic, sauté until translucent.
- Add the broccoli and chicken broth, then bring to a boil. Reduce the heat and let it simmer until the broccoli is tender.
- Stir in the milk, shredded cheddar cheese, crumbled turkey bacon, salt, and pepper. Cook until the cheese is melted and creamy.
- If a thicker consistency is desired, mix cornstarch with a little water and stir it into the soup, cooking for an additional 5 minutes.
