Hobo Casserole: Lean Beef & Veggies

This hobo casserole is a hearty and comforting dish featuring lean beef and a variety of vegetables, perfect for a family meal.

  • 1 pound lean ground beef
  • 2 cups mixed vegetables (carrots, peas, corn)
  • 1 can diced tomatoes
  • 1 cup beef broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 2 cups cooked pasta
  • 1 cup shredded cheese (cheddar or mozzarella)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef over medium heat.
  3. Add the mixed vegetables, diced tomatoes, beef broth, and seasonings. Stir to combine.
  4. Simmer for about 10 minutes.
  5. Mix in the cooked pasta and half of the cheese.
  6. Transfer the mixture to a greased baking dish.
  7. Top with the remaining cheese.
  8. Bake for 25-30 minutes, until the cheese is bubbly and golden.
