Hot Elote Dip

A deliciously creamy dip inspired by the flavors of elote, perfect for parties.

  • 2 cups corn kernels
  • 1 cup cream cheese
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup mayonnaise
  • 1 tablespoon lime juice
  • 2 teaspoons chili powder
  • 1 teaspoon garlic powder
  • Salt to taste
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine corn, cream cheese, sour cream, cheddar cheese, mayonnaise, lime juice, chili powder, garlic powder, and salt.
  3. Mix until well combined.
  4. Add fresh cilantro and stir.
  5. Transfer the mixture to a baking dish, spreading it evenly.
  6. Bake for 20-25 minutes or until bubbly and golden.
  7. Serve warm with tortilla chips.

Notes

  • For extra flavor, top with additional cheese before baking.
