Kid Requested Healthy Zucchini Muffins

Delicious and healthy zucchini muffins that kids will love.

Ingredients

  • 2 cups grated zucchini
  • 1 cup whole wheat flour
  • 1/2 cup honey
  • 1/4 cup coconut oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, mix the grated zucchini, honey, coconut oil, eggs, and vanilla extract until well combined.
  3. In another bowl, whisk together the whole wheat flour, baking soda, baking powder, salt, and cinnamon.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Pour the batter into the prepared muffin tin, filling each cup about 3/4 full.
  6. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow to cool before serving.

Notes

  • For added flavor, consider adding chocolate chips or nuts.
  • These muffins freeze well, making them great for meal prep.
