Loaded Pasta Salad

A delicious and hearty pasta salad loaded with turkey bacon and chicken ham.

Ingredients

  • 8 ounces pasta (elbow or rotini)
  • 4 slices turkey bacon
  • 1 cup diced chicken ham
  • 1 cup cherry tomatoes, halved
  • 1/2 cup diced cucumber
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup mayonnaise
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package instructions. Drain and let cool.
  2. In a pan, cook the turkey bacon until crispy. Chop into bite-sized pieces.
  3. In a large bowl, combine pasta, turkey bacon, chicken ham, tomatoes, cucumber, and cheddar cheese.
  4. In a small bowl, whisk together mayonnaise, olive oil, lemon juice, salt, and pepper.
  5. Pour the dressing over the pasta salad and mix well.
  6. Chill for at least 30 minutes before serving.

Notes

  • Feel free to add other vegetables like bell peppers or corn.
  • For a healthier option, use Greek yogurt instead of mayonnaise.
