  • 6 slices turkey bacon
  • 1 cup shredded cheese
  • 1 cup sour cream
  • 1/2 cup green onions, chopped
  • 1 can black beans, drained
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash and pierce each potato with a fork, coat with olive oil, and bake for 45-60 minutes or until tender.
  3. In a skillet, cook the turkey bacon until crispy, then chop into pieces.
  4. Once potatoes are cooked, let cool slightly, then scoop out the insides, mixing them with sour cream, cheese, and spices.
  5. Stuff the potato skins with the mixture, top with black beans, bacon, and green onions.
  6. Return to the oven for an additional 10-15 minutes until heated through.
