  • 8 ounces pasta of choice
  • 4 slices turkey bacon
  • 1 cup corn kernels, fresh or frozen
  • 1/2 cup red onion, diced
  • 1/2 cup cilantro, chopped
  • 1 cup diced tomatoes
  • 1/2 cup cheese, crumbled (feta or cotija)
  • 1/4 cup mayonnaise
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and let cool.
  2. In a skillet, cook the turkey bacon until crispy. Remove and crumble.
  3. In a large bowl, combine pasta, corn, red onion, cilantro, tomatoes, and cheese.
  4. In a small bowl, mix together mayonnaise, lime juice, chili powder, salt, and pepper.
  5. Add the dressing to the pasta mixture and toss to combine.
  6. Garnish with crumbled turkey bacon before serving.

Notes

  • For a spicier version, add diced jalapeños.
