  • 2 cups corn, cooked
  • 4 strips turkey bacon, cooked and crumbled
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/2 cup cilantro, chopped
  • 1 cup cotija cheese, crumbled
  • 1/4 cup mayonnaise
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt

Instructions

  1. Cook pasta according to package instructions; drain and let cool.
  2. In a large bowl, combine the cooked pasta, corn, turkey bacon, cherry tomatoes, red onion, cilantro, and cotija cheese.
  3. In a small bowl, mix together the mayonnaise, lime juice, chili powder, and salt.
  4. Pour the dressing over the pasta mixture and stir to coat well.
  5. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • Feel free to add other vegetables like bell peppers or avocado.
  • To make it spicier, add more chili powder or jalapeños.
