  • 1 pound lamb, diced
  • 1 can chickpeas, drained
  • 4 tablespoons olive oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon cinnamon
  • 4 cups vegetable broth

Instructions

  1. Rinse the basmati rice under cold water until it runs clear.
  2. In a large pot, heat the olive oil over medium heat and sauté the onions until soft.
  3. Add the garlic and spices, cooking until fragrant.
  4. Stir in the lamb and brown on all sides.
  5. Add chickpeas and broth, then bring to a boil.
  6. Once boiling, add the rice, cover, and reduce heat to low.
  7. Cook for 15-20 minutes until rice is tender.

Notes

  • For an extra kick, add a pinch of cayenne pepper.
  • Garnish with fresh parsley before serving.
