Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup melted butter
  • 2 cream cheese blocks
  • 1/2 cup powdered sugar
  • 1 lemon, juiced and zested
  • 1 teaspoon vanilla extract
  • 1 cup blueberries

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, combine the graham cracker crumbs and melted butter. Press mixture into the bottom of muffin tins to form the crust.
  3. In a separate bowl, beat the cream cheese until smooth, then add powdered sugar, lemon juice, lemon zest, and vanilla extract. Mix until creamy.
  4. Pour the cheesecake mixture over the crusts in the muffin tins.
  5. Top each with blueberries.
  6. Bake in the preheated oven for 20 minutes. Remove and let cool.
  7. Chill in the refrigerator for at least 2 hours before serving.

Notes

  • For additional flavor, you can add more lemon zest.
  • Serve with whipped cream for extra creaminess.
