My Fave Birria Tacos

An easy and delicious recipe for birria tacos that you can make at home.

Ingredients

  • 2 pounds beef chuck roast
  • 2 cups beef broth
  • 3 dried guajillo chiles
  • 2 dried ancho chiles
  • 1 onion, chopped
  • 5 garlic cloves
  • 2 teaspoons cumin
  • 1 teaspoon oregano
  • 1 bay leaf
  • 12 corn tortillas
  • 1 cup chopped cilantro
  • 1 lime, cut into wedges

Instructions

  1. Soak the dried chiles in hot water for 20 minutes.
  2. Blend the chiles with garlic, onion, cumin, oregano, and some beef broth to form a paste.
  3. Heat a pot and brown the beef chuck on all sides.
  4. Add the blended paste, bay leaf, and remaining beef broth to the pot.
  5. Cover and simmer for 2 hours until the meat is tender.
  6. Shred the meat and serve in tortillas with cilantro and lime.

Notes

  • For extra flavor, marinate the beef overnight in the spice mix.
  • Adjust the spiciness by adding more or fewer chiles.
