- 4 slices turkey bacon
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 1 teaspoon paprika
- 1 teaspoon cumin
- 4 large eggs
- Salt and pepper to taste
- Fresh parsley for garnish
- In a large skillet, cook the turkey bacon over medium heat until crispy. Remove and chop.
- Add the onion and bell pepper to the skillet and sauté until soft.
