One Pot Chicken and Rice

A quick and easy one pot chicken and rice recipe that’s perfect for busy weeknights.

  • 1 pound chicken thighs
  • 2 cups chicken broth
  • 1 cup long-grain rice
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup frozen peas

Instructions

  1. In a large pot, heat some oil over medium heat. Add the chicken and brown on both sides.
  2. Add the onion and garlic and sauté until translucent.
  3. Stir in the rice, paprika, salt, and pepper, and cook for an additional minute.
  4. Add the chicken broth and bring to a boil.
  5. Reduce heat to low, cover, and simmer for about 20 minutes or until rice is cooked.
  6. Add the peas and cook for another 5 minutes.
  7. Fluff with a fork and serve hot.

Notes

  • For added flavor, you can add vegetables like bell peppers or carrots.
  • Make sure to brown the chicken well for the best taste.
