- 1 pound chicken thighs
- 2 cups chicken broth
- 1 cup long-grain rice
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup frozen peas
- In a large pot, heat some oil over medium heat. Add the chicken and brown on both sides.
- Add the onion and garlic and sauté until translucent.
- Stir in the rice, paprika, salt, and pepper, and cook for an additional minute.
- Add the chicken broth and bring to a boil.
- Reduce heat to low, cover, and simmer for about 20 minutes or until rice is cooked.
- Add the peas and cook for another 5 minutes.
