One Pot Creamy Cajun Chicken Pasta

A delicious one pot creamy cajun chicken pasta that’s easy to make and tastes better than takeout.

Ingredients

  • 1 pound chicken breast, diced
  • 8 ounces penne pasta
  • 1 tablespoon olive oil
  • 1 teaspoon cajun seasoning
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup bell pepper, sliced
  • 1 cup onion, diced
  • 1 cup parmesan cheese, grated
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced chicken and cook until browned.
  2. Add the onion and bell pepper, and cook until softened.
  3. Stir in the cajun seasoning, then add the chicken broth and bring to a boil.
  4. Add the pasta and cook according to package instructions until al dente.
  5. Stir in the heavy cream and parmesan cheese, and cook until the sauce is thickened.
  6. Season with salt and pepper to taste before serving.

Notes

  • For a spicier dish, add more cajun seasoning.
  • This dish can be topped with fresh parsley for added flavor.
