One Pot Spicy Rigatoni for a Cozy Dinner Tonight

  • 12 ounces rigatoni pasta
  • 6 strips turkey bacon, chopped
  • 1 tablespoon olive oil
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 1 teaspoon red pepper flakes
  • 1 can (28 ounces) diced tomatoes
  • 2 cups chicken broth
  • 1 teaspoon Italian seasoning
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, add olive oil, onion, and garlic. Sauté until the onion is translucent.
  3. Add red pepper flakes, diced tomatoes, chicken broth, and Italian seasoning. Stir well.
  4. Bring the mixture to a boil and add the rigatoni. Reduce heat and cover, cooking for about 12 minutes or until pasta is al dente.
  5. Stir in Parmesan cheese and fresh basil. Mix well before serving.
  6. Top with the crispy turkey bacon before serving.

Notes

  • Adjust the amount of red pepper flakes to taste for desired spiciness.
  • Top with additional Parmesan if desired.
