Orzo Salad

A delicious and easy Orzo Salad that will delight everyone at the table.

Ingredients

  • 1 cup orzo pasta
  • 2 cups cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Cook the orzo pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine the cooled orzo, cherry tomatoes, cucumber, red onion, parsley, and feta cheese.
  3. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour over the salad and toss to combine.
  4. Serve immediately or chill in the refrigerator for 30 minutes before serving to enhance the flavors.
