- 1 ½ cups graham cracker crumbs
- ½ cup sugar
- ½ cup unsalted butter, melted
- 2 (8 oz) packages cream cheese, softened
- 1 cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups fresh peaches, peeled and sliced
- 1 tablespoon lemon juice
- Preheat the oven to 325°F (160°C).
- In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of a greased 9×13 inch pan.
- In a large bowl, beat the cream cheese and sugar until smooth. Add the eggs one at a time, mixing well after each addition, followed by the vanilla extract.
- Pour the cream cheese mixture over the crust and smooth the top.
- In a separate bowl, toss the sliced peaches with lemon juice. Carefully layer the peaches on top of the cheesecake mixture.
- Bake for 40-45 minutes, or until the edges are set and the center is slightly jiggly. Allow to cool, then refrigerate for at least 4 hours before slicing.
Notes
- For best results, use fresh peaches when in season.
- Feel free to substitute with other fruits like strawberries or blueberries.
