Peppermint Swirl Cookies

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon peppermint extract
  • 1/2 cup red and green sprinkles

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream the butter and sugar together until light and fluffy.
  3. Add the egg and vanilla extract; mix until combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Add the peppermint extract and mix well.
  7. Divide the dough in half and tint one half with food coloring.
  8. Roll each piece of dough into a log and twist them together.
  9. Slice the logs into rounds and place on a baking sheet.
  10. Bake for 10-12 minutes or until the edges are lightly golden.
  11. Remove from the oven and sprinkle with red and green sprinkles.
  12. Allow to cool before serving.

Notes

  • For a stronger peppermint flavor, add more peppermint extract.
  • Store cookies in an airtight container for up to one week.
