  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon turmeric
  • 6 cups vegetable broth
  • 1 cup carrots, sliced
  • 1 cup celery, chopped
  • 1 cup green beans, chopped
  • 1 cup egg noodles
  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 1 cup spinach, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onions and cook until translucent.
  3. Stir in garlic, cumin, and turmeric; cook for 1 minute.
  4. Pour in vegetable broth and bring to a boil.
  5. Add carrots, celery, and green beans. Reduce heat and simmer for 10 minutes.
  6. Add egg noodles and chickpeas, cooking until noodles are tender.
