  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 cup canned pumpkin puree
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together the flour, baking powder, baking soda, spices, and salt.
  3. In another bowl, mix the sugars, oil, and eggs until well combined.
  4. Add the pumpkin puree and vanilla, mixing until smooth.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  6. Fill the cupcake liners about 2/3 full with the batter.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Let cool completely before frosting.

Notes

  • For extra flavor, add chocolate chips to the batter.
  • Make sure the cupcakes are completely cool before applying the frosting to prevent melting.
