  • 1 tsp baking soda
  • ½ tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp ground ginger
  • ½ tsp salt
  • ½ cup granulated sugar
  • ½ cup packed brown sugar
  • 1 cup canned pumpkin puree
  • 2 large eggs
  • ½ cup vegetable oil
  • 1 tsp vanilla extract
  • ½ cup chopped nuts (optional)
  • ½ cup streusel topping (see section below)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mix together the flour, baking soda, baking powder, spices, and salt.
  3. In another bowl, combine the sugars, pumpkin puree, eggs, oil, and vanilla.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  5. If using, fold in the chopped nuts.
  6. Pour half of the batter into the prepared loaf pan, sprinkle half of the streusel topping, then pour in the remaining batter and top with the rest of the streusel.
  7. Bake for 60-70 minutes or until a toothpick comes out clean. Let cool before slicing.

Notes

  • For an extra moist bread, wrap in plastic wrap and leave overnight before slicing.
  • You can substitute pumpkin with sweet potato puree if preferred.
