- 1 tsp baking soda
- ½ tsp baking powder
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- ¼ tsp ground ginger
- ½ tsp salt
- ½ cup granulated sugar
- ½ cup packed brown sugar
- 1 cup canned pumpkin puree
- 2 large eggs
- ½ cup vegetable oil
- 1 tsp vanilla extract
- ½ cup chopped nuts (optional)
- ½ cup streusel topping (see section below)
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, mix together the flour, baking soda, baking powder, spices, and salt.
- In another bowl, combine the sugars, pumpkin puree, eggs, oil, and vanilla.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
- If using, fold in the chopped nuts.
- Pour half of the batter into the prepared loaf pan, sprinkle half of the streusel topping, then pour in the remaining batter and top with the rest of the streusel.
- Bake for 60-70 minutes or until a toothpick comes out clean. Let cool before slicing.
