Quick and Easy Cinnamon Roll Muffins

  • 1 cup sugar
  • 1 tablespoon baking powder

  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup brown sugar
  • 1 tablespoon ground cinnamon
  • 1 cup powdered sugar
  • 2 tablespoons milk

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
  3. In another bowl, mix the melted butter, milk, eggs, and vanilla extract until well combined.
  4. Combine the wet and dry ingredients, mixing until just blended.
  5. In a small bowl, mix the brown sugar and cinnamon for the swirl filling.
  6. Fill each muffin cup halfway with batter, sprinkle with the cinnamon sugar mixture, then top with the remaining batter.
  7. Bake for 18-20 minutes, or until a toothpick comes out clean.
  8. For the glaze, mix powdered sugar and milk until smooth and drizzle on top of cooled muffins.
