  • 4 cups chicken broth
  • 1 can coconut milk
  • 2 tablespoons red curry paste
  • 1 tablespoon fish sauce
  • 2 cups mushrooms, sliced
  • 1 red bell pepper, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 bunch cilantro, chopped
  • 2 limes, juiced
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat a bit of oil over medium heat.
  2. Add onions, garlic, and ginger, sauté until fragrant.
  3. Add chicken and cook until browned.
  4. Pour in chicken broth and bring to a boil.
  5. Stir in coconut milk and red curry paste.
  6. Add mushrooms and bell pepper, simmer for 10 minutes.
