Red Velvet Strawberry Cheesecake

  • 1 cup cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 2 cups fresh strawberries, sliced

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the red velvet cake mix, cream cheese, granulated sugar, vanilla extract, and eggs. Mix until smooth.
  3. Pour the mixture into a greased springform pan and bake for 30-35 minutes.
  4. While the cheesecake cools, whip the heavy cream with powdered sugar until soft peaks form.
  5. Spread the whipped cream over the top of the cooled cheesecake and decorate with sliced strawberries.
