  • 4 tablespoons olive oil

  • 1 lemon, halved

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pat the Cornish hens dry with paper towels.
  3. Rub the olive oil over the skin of the hens.
  4. Season with salt, pepper, rosemary, and thyme.
  5. Place the lemon halves inside the cavity of the hens.
  6. Put the hens on a roasting pan breast side up.
  7. Roast in the oven for about 1 hour or until the internal temperature reaches 165°F (74°C).
  8. Let rest for 10 minutes before serving.
