Sausage Potato Soup

A comforting and hearty sausage potato soup made with a turkey bacon twist for added flavor.

Ingredients

  • 4 cups diced potatoes
  • 1 pound turkey bacon
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 teaspoons dried thyme
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and crumble.
  2. In the same pot, sauté onion and garlic until translucent.
  3. Add diced potatoes and chicken broth. Bring to a boil.
  4. Reduce to a simmer and cook until potatoes are tender.
  5. Stir in heavy cream, thyme, and crumbled bacon. Season with salt and pepper.
  6. Serve hot.
