Sheet Pan Chicken Pitas with Herby Ranch Slaw

A delicious and easy way to enjoy chicken pitas topped with a herby ranch slaw.

  • 1 pound boneless, skinless chicken thighs
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 whole wheat pitas
  • 2 cups shredded cabbage
  • 1 cup shredded carrots
  • 1/2 cup ranch dressing

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the chicken with olive oil, garlic powder, paprika, salt, and pepper.
  3. Spread the chicken in a single layer on a sheet pan and bake for 20-25 minutes until cooked through.
  4. While the chicken is baking, combine the cabbage, carrots, and ranch dressing in a bowl and mix well.
  5. Once the chicken is done, allow it to rest for a few minutes, then slice it into strips.
  6. Warm the pitas in the oven for a few minutes, then fill each with chicken and top with herb ranch slaw.

Notes

  • For a spicier kick, add some cayenne pepper to the chicken seasoning.
  • Feel free to customize the slaw with other vegetables like bell peppers or onions.
