Slow-Braised Beef Roast with Cranberry Balsamic Glaze

A delicious slow-braised beef roast that infuses rich flavors with a tangy cranberry balsamic glaze.

  • 3 pounds beef roast
  • 1 cup cranberry juice
  • 1/2 cup balsamic vinegar
  • 1 tablespoon brown sugar
  • 2 garlic cloves, minced
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. In a bowl, mix the cranberry juice, balsamic vinegar, brown sugar, garlic, thyme, and rosemary.
  3. Season the beef roast with salt and pepper, then sear it in a hot pan until browned on all sides.
  4. Place the seared roast in a roasting pan and pour the cranberry mixture over it.
  5. Cover and roast in the oven for about 3 to 4 hours, until the meat is tender.
  6. Let it rest before slicing and serve with the glaze.
