- 3 pounds beef roast
- 1 cup cranberry juice
- 1/2 cup balsamic vinegar
- 1/4 cup brown sugar
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1 onion, chopped
- 1 carrot, diced
- 2 sprigs fresh thyme
- Preheat the oven to 300°F (150°C).
- In a large Dutch oven, heat olive oil over medium heat and brown the beef roast on all sides.
- Remove the roast and set aside. In the same pot, add onions and carrots, cooking until softened.
- Add garlic and cook for an additional minute.
- Stir in cranberry juice, balsamic vinegar, brown sugar, salt, and pepper.
- Return the roast to the pot and add thyme.
- Cover and bake in preheated oven for 3-4 hours, or until tender.
- Let rest before slicing and serve with the glaze.
Notes
- Allow the roast to rest for at least 15 minutes before slicing to retain juices.
