Slow-Braised Beef Roast with Cranberry Balsamic Glaze

A tender and flavorful beef roast glazed with a sweet and tangy cranberry balsamic sauce.

  • 3 pounds beef roast
  • 1 cup cranberry juice
  • 1/2 cup balsamic vinegar
  • 1/4 cup brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 carrot, diced
  • 2 sprigs fresh thyme

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. In a large Dutch oven, heat olive oil over medium heat and brown the beef roast on all sides.
  3. Remove the roast and set aside. In the same pot, add onions and carrots, cooking until softened.
  4. Add garlic and cook for an additional minute.
  5. Stir in cranberry juice, balsamic vinegar, brown sugar, salt, and pepper.
  6. Return the roast to the pot and add thyme.
  7. Cover and bake in preheated oven for 3-4 hours, or until tender.
  8. Let rest before slicing and serve with the glaze.

Notes

  • Allow the roast to rest for at least 15 minutes before slicing to retain juices.
