- 3 pounds beef roast
- 1 cup cranberry juice
- 1/2 cup balsamic vinegar
- 2 tablespoons brown sugar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 cloves garlic, minced
- 1 onion, sliced
- 4 sprigs fresh thyme
- Preheat your oven to 325°F (163°C).
- In a large oven-safe pot, sear the beef roast on all sides until browned.
- Add the garlic and onion to the pot, and cook until softened.
- Pour in the cranberry juice, balsamic vinegar, and add brown sugar, salt, pepper, and thyme.
