Slow-Braised Beef Roast with Cranberry Balsamic Glaze

  • 3 pounds beef roast
  • 1 cup cranberry juice
  • 1/2 cup balsamic vinegar
  • 2 tablespoons brown sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cloves garlic, minced
  • 1 onion, sliced
  • 4 sprigs fresh thyme

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a large oven-safe pot, sear the beef roast on all sides until browned.
  3. Add the garlic and onion to the pot, and cook until softened.
  4. Pour in the cranberry juice, balsamic vinegar, and add brown sugar, salt, pepper, and thyme.
  5. Cover and transfer to the oven; braise for 3 hours or until tender.
  6. Remove roast, let rest, then slice and serve with glaze.

Notes

  • For extra flavor, marinate the roast overnight in the liquid.
