Ingredients

  • 1 cup feta cheese, crumbled
  • 1 onion, finely chopped
  • 1 egg
  • 1 package phyllo pastry
  • 1/4 cup olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a pan, sauté the onion until translucent.
  3. Add the spinach and cook until wilted, then remove from heat.
  4. In a bowl, combine the spinach mixture, feta cheese, and beaten egg.
  5. Take a sheet of phyllo pastry, brush with olive oil, and add a spoonful of the filling.
  6. Fold and shape into triangles, then place on a baking sheet.
  7. Brush the tops with olive oil and bake for 20-25 minutes or until golden brown.
