Spinach Curry Sauce with Crispy Tofu

A delicious and easy recipe for spinach curry sauce topped with crispy tofu.

Ingredients

  • 2 cups fresh spinach
  • 1 block firm tofu
  • 1 tablespoon olive oil
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • 1 tablespoon curry powder
  • 1 cup coconut milk
  • 1 tablespoon soy sauce
  • Salt to taste

Instructions

  1. Press the tofu to remove excess water and cut it into cubes.
  2. Heat olive oil in a skillet and cook the tofu until golden brown and crispy.
  3. In a blender, combine fresh spinach, garlic, ginger, curry powder, coconut milk, and soy sauce.
  4. Blend until smooth and pour into the skillet with the crispy tofu.
  5. Simmer for 5-10 minutes. Add salt to taste.
  6. Serve hot with rice or bread.

Notes

  • For added spice, include chili powder or fresh chilies.
  • Adjust the thickness of the sauce by adding more or less coconut milk.
