Spinach Stuffed Flounder

  • 4 fillets flounder
  • 2 cups fresh spinach
  • 1/2 cup cream cheese
  • 1/4 cup grated Parmesan cheese
  • 1 clove garlic, minced
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a pan, sauté the garlic and spinach until wilted.
  3. In a bowl, mix the sautéed spinach with cream cheese and Parmesan.
  4. Place a spoonful of the mixture on each flounder fillet and roll them up.
  5. Place the rolls in a baking dish, drizzle with lemon juice, and bake for 20 minutes.

Notes

  • For added flavor, you can sprinkle more Parmesan cheese on top before baking.
  • Serve with a side of rice or a fresh salad.
