  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 3 large eggs
  • 16 ounces cream cheese, softened
  • 1 teaspoon vanilla extract
  • 2 cups fresh strawberries, pureed
  • 1 cup whipped cream

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, combine graham cracker crumbs and melted butter. Press into the bottom of a springform pan.
  3. In a mixing bowl, beat together cream cheese and sugar until smooth.
  4. Add in the eggs one at a time, mixing well after each addition.
  5. Stir in vanilla extract and strawberry puree until well combined.
  6. Pour the mixture over the crust and bake for 50-60 minutes or until set.
  7. Let the cheesecake cool, then top with whipped cream and additional strawberries, if desired.
