Strawberry Rhubarb Pie

A delightful dessert that perfectly combines the sweetness of strawberries with the tartness of rhubarb.

  • 2 cups sliced strawberries
  • 2 cups sliced rhubarb
  • 1 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 package pie crusts

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, combine strawberries, rhubarb, sugar, flour, salt, vanilla, and lemon juice.
  3. Transfer the mixture into the pie crust.
  4. Cover with the second pie crust, seal the edges, and cut slits for ventilation.
  5. Bake for 20 minutes, then reduce heat to 350°F (175°C) and bake for an additional 30-40 minutes.
  6. Let cool before serving.
