  • 4 strips turkey bacon
  • 1 cup bread crumbs
  • 1/2 cup diced onions
  • 1/2 cup chopped celery
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup chicken broth

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, cook the diced turkey bacon until crispy, then remove and chop.
  3. In the same skillet, sauté onions and celery until soft.
  4. In a bowl, mix together bread crumbs, bacon, sautéed veggies, garlic powder, salt, and pepper.
  5. Add chicken broth to the breadcrumb mixture to moisten.
  6. Stuff the Cornish hens with the mixture and secure with toothpicks.
  7. Place the hens in a roasting pan and cover with foil.
  8. Bake in the preheated oven for 1 hour, then remove foil and bake for an additional 15-20 minutes until golden brown.
  9. Let rest before carving and serving.
