Super Soft Pumpkin Cookies

These Super Soft Pumpkin Cookies are an irresistible treat that will melt in your mouth.

Ingredients

  • 1 cup canned pumpkin puree
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 large egg

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together the pumpkin puree, sugar, and softened butter until smooth.
  3. Add the egg and mix until fully incorporated.
  4. In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Drop spoonfuls of dough onto the prepared baking sheet.
  7. Bake for 12-15 minutes or until the edges are golden.
  8. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

  • For extra flavor, you can add chocolate chips or nuts to the dough.
