2 cups fresh sweet corn
1 cup all-purpose flour
1/2 cup cornmeal
2 large eggs
1/4 cup milk
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon black pepper
6 slices turkey bacon
4 sandwich buns
1/2 cup avocado slices
1/4 cup fresh cilantro
Instructions
In a large bowl, mix the corn, flour, cornmeal, eggs, milk, baking powder, salt, and pepper until combined.
Heat oil in a skillet over medium heat. Pour a ladle of the mixture and cook until golden brown on both sides.
In a separate pan, cook the turkey bacon until crispy.
Assemble the sandwiches by placing a corn fritter on the bottom bun, followed by turkey bacon, avocado slices, and cilantro. Top with the other half of the bun.
Serve warm and enjoy!
Notes
For added spice, consider adding chopped jalapeños to the fritter mixture.
