Sweet Corn Fritter Breakfast Sandwiches

  • 2 cups fresh sweet corn
  • 1 cup all-purpose flour
  • 1/2 cup cornmeal
  • 2 large eggs
  • 1/4 cup milk
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 6 slices turkey bacon
  • 4 sandwich buns
  • 1/2 cup avocado slices
  • 1/4 cup fresh cilantro

Instructions

  1. In a large bowl, mix the corn, flour, cornmeal, eggs, milk, baking powder, salt, and pepper until combined.
  2. Heat oil in a skillet over medium heat. Pour a ladle of the mixture and cook until golden brown on both sides.
  3. In a separate pan, cook the turkey bacon until crispy.
  4. Assemble the sandwiches by placing a corn fritter on the bottom bun, followed by turkey bacon, avocado slices, and cilantro. Top with the other half of the bun.
  5. Serve warm and enjoy!

Notes

  • For added spice, consider adding chopped jalapeños to the fritter mixture.
  • Make sure the oil is hot enough before adding the fritters to ensure they crisp up nicely.
