Taco Lasagna: Easy and Indulgent Comfort Food for Busy Nights

Taco Lasagna

Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 9 sheets lasagna noodles
  • 2 cups shredded cheese
  • 1 can black beans, drained
  • 1 cup salsa
  • 1 cup sour cream

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, cook ground beef over medium heat until browned, then stir in taco seasoning.
  3. In a baking dish, layer 3 lasagna noodles, half the beef mixture, a layer of black beans, half the salsa, and a layer of cheese. Repeat the layers and top with remaining noodles and cheese.
  4. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes until cheese is bubbly.
  5. Allow to cool for a few minutes, then slice and serve with sour cream.

Notes

  • Great for meal prep and can be stored in the fridge for up to 3 days.
  • Feel free to add additional vegetables like bell peppers or onions.
