- 2 pounds beef chuck roast
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 bay leaves
- 1 tablespoon ground cumin
- 1 tablespoon dried oregano
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 6 corn tortillas
- 1 cup chopped cilantro
- 1 lime, cut into wedges
- In a large pot, combine the beef chuck roast, onion, garlic, bay leaves, cumin, oregano, chili powder, salt, and black pepper.
- Add enough water to cover the meat and bring to a boil.
- Reduce heat and simmer for about 2-3 hours until the meat is tender.
- Remove the meat and shred it with two forks, then set aside.
- Heat a skillet over medium heat and warm the tortillas.
- Fill the tortillas with shredded beef, top with cilantro, and squeeze lime juice on top.
- Serve hot with a side of the broth.
