  • 2 pounds beef chuck roast
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 bay leaves
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 6 corn tortillas
  • 1 cup chopped cilantro
  • 1 lime, cut into wedges

Instructions

  1. In a large pot, combine the beef chuck roast, onion, garlic, bay leaves, cumin, oregano, chili powder, salt, and black pepper.
  2. Add enough water to cover the meat and bring to a boil.
  3. Reduce heat and simmer for about 2-3 hours until the meat is tender.
  4. Remove the meat and shred it with two forks, then set aside.
  5. Heat a skillet over medium heat and warm the tortillas.
  6. Fill the tortillas with shredded beef, top with cilantro, and squeeze lime juice on top.
  7. Serve hot with a side of the broth.

Notes

  • For extra flavor, marinate the beef overnight with spices.
  • Serve with diced onions and additional lime wedges for garnish.
