  • 2 cups whole milk
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 3 large egg yolks
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1/4 cup toasted coconut for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine sweetened shredded coconut, flour, melted butter, sugar, and salt to create the crust.
  3. Press the mixture into a pie pan and bake for 15-20 minutes or until golden brown.
  4. In a saucepan, whisk together milk, sugar, cornstarch, and salt over medium heat.
  5. In a separate bowl, whisk the egg yolks and gradually add some of the hot mixture into the yolks to temper them.
  6. Return the yolk mixture to the saucepan and cook until thickened.
  7. Stir in vanilla extract and let cool.
  8. In a separate bowl, whip heavy cream with powdered sugar until soft peaks form.
  9. Fold whipped cream into the cooled coconut mixture.
  10. Pour the filling into the cooled crust and chill for at least 4 hours before serving.
  11. Garnish with toasted coconut before slicing.
