  • 4 large russet potatoes
  • 6 slices turkey bacon
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1 green onion, chopped
  • 1 teaspoon garlic powder
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the potatoes thoroughly and poke holes in them with a fork.
  3. Place the potatoes directly on the oven rack and bake for about 45 minutes or until tender.
  4. While the potatoes bake, cook the turkey bacon in a skillet until crispy, then crumble it.
  5. Once the potatoes are baked, remove them from the oven and let them cool slightly.
  6. Cut the potatoes in half lengthwise and scoop out the insides into a bowl, leaving a thin layer of potato in the skins.
  7. Add the sour cream, garlic powder, salt, pepper, crumbled bacon, and half of the cheese to the potato insides, and mix until smooth.
  8. Stuff the potato skins with the mixture and top with the remaining cheese.
  9. Bake again for 15-20 minutes until heated through and the cheese is melted and bubbly.
  10. Garnish with chopped green onion before serving.

  • For extra flavor, consider adding spices like paprika or chili powder.
  • Can be made ahead of time and reheated.
