- 4 large russet potatoes
- 6 slices turkey bacon
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1 green onion, chopped
- 1 teaspoon garlic powder
- Salt to taste
- Black pepper to taste
- Preheat your oven to 400°F (200°C).
- Wash the potatoes thoroughly and poke holes in them with a fork.
- Place the potatoes directly on the oven rack and bake for about 45 minutes or until tender.
- While the potatoes bake, cook the turkey bacon in a skillet until crispy, then crumble it.
- Once the potatoes are baked, remove them from the oven and let them cool slightly.

- Stuff the potato skins with the mixture and top with the remaining cheese.
