Ultimate Breakfast Lasagna

  • 12 lasagna noodles
  • 1 pound breakfast sausage
  • 6 large eggs
  • 2 cups cottage cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup chopped green onions

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, cook the breakfast sausage until browned. Drain excess fat.
  3. In a bowl, whisk together eggs, cottage cheese, garlic powder, salt, and pepper.
  4. Layer lasagna noodles, sausage, egg mixture, mozzarella, and Parmesan in a baking dish. Repeat layers until all ingredients are used.
  5. Top with remaining mozzarella cheese and green onions.
  6. Bake for 30-40 minutes, until golden and set.
  7. Let cool for 10 minutes before slicing and serving.
