  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tablespoon vanilla bean paste
  • 1 cup heavy cream
  • 1/4 cup brown sugar

Instructions

  1. Preheat the oven to 325°F (163°C) and line a cupcake pan with liners.
  2. In a bowl, combine graham cracker crumbs and melted butter, then press into the bottom of each liner.
  3. In a mixer, beat cream cheese until smooth, add sugar and mix until combined.
  4. Add eggs one at a time, mixing well after each addition. Mix in vanilla bean paste.
  5. Pour the cream cheese mixture over the crust in the cupcake liners.
  6. Bake for 20-25 minutes until set. Let cool completely.
  7. Whip the heavy cream until stiff peaks form and top the cooled cupcakes.
  8. Sprinkle brown sugar on top and use a torch to caramelize.

  • For an extra vanilla flavor, use whole vanilla beans instead of paste.
