  • 1/4 cup coconut oil
  • 1/4 cup maple syrup
  • 1 cup coconut cream
  • 1/2 cup aquafaba
  • 1/2 teaspoon cream of tartar
  • 1/4 cup powdered sugar
  • 1 tablespoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix almond flour, coconut oil, and maple syrup to form a dough.
  3. Press the dough into tart pans and bake for 12-15 minutes.
  4. While the tarts are cooling, whip aquafaba and cream of tartar until stiff peaks form.
  5. Gradually add powdered sugar while continuing to whip.
  6. Spread the coconut cream on the cooled tarts, then top with the meringue.
  7. Use a kitchen torch to lightly brown the meringue tops.
