White Bean and Potato Soup

A comforting and hearty white bean and potato soup that is perfect for any occasion.

Ingredients

  • 2 cups white beans, soaked and cooked
  • 4 cups vegetable broth
  • 2 medium potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until the onion is translucent.
  2. Add the diced potatoes, cooked white beans, vegetable broth, thyme, and bay leaf. Bring to a boil.
  3. Reduce heat and let simmer for about 20 minutes, until the potatoes are tender.
  4. Remove the bay leaf, season with salt and pepper, and serve hot.

Notes

  • For a creamier soup, blend a portion of the soup and then return it to the pot.
  • This soup pairs well with crusty bread.
