  • 1 cup all-purpose flour
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup olive oil
  • 2 large eggs
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix grated zucchini with olive oil and eggs.
  3. In another bowl, combine flour, Parmesan, baking powder, baking soda, salt, pepper, garlic powder, and onion powder.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Pour the batter into a greased muffin tin, filling each cup about 3/4 full.
  6. Bake for 20-25 minutes, or until a toothpick comes out clean.
  7. Let cool before serving.

  • For an extra cheesy flavor, sprinkle additional Parmesan on top before baking.
